Chicken drumstick recipe without pasta

This easy coxinha recipe is great for when you want to make coxinha but don't have a lot of time or enough ingredients to prepare the dough. To bread the seasoned chicken stuffing you just need breadcrumbs and eggs. The seasoning of the chicken stuffing is a little to taste, in this case I used onion, garlic, chives and parsley and mixed it with cream cheese.

Ingredients for making pasta without pasta:
4 whole eggs
500 milliliters of oil for frying
1 kilogram of boneless chicken breast
1 chicken broth tablet
2 garlic cloves
½ onion
300 grams of breadcrumbs
300 grams of creamy cream cheese from a tube
parsley to taste
chives to taste
How to make chicken drumstick without pasta:
In a pressure cooker, place the chicken and fill with water to cover the chicken. Place a tablet of chicken stock, cover and, when the pan starts to sizzle, let it cook for 30 minutes.
After the chicken is well cooked, drain all the broth and set it aside. Leave the chicken in the pan, recap and shake the pan vigorously, up and down, for about 1 minute - this is a trick to easily shred chicken.
Reserve the chicken in a bowl and prepare the stir-fry to season the chicken: in a pan with a little oil, place the onion and saute for 2 minutes. Then add the garlic, chives and parsley and saute a little more.
Tip: Add the onion first because it takes longer to cook.
Place the shredded chicken and mix well in the stir-fry. Then add the cream cheese and mix this chicken stuffing for coxinha until smooth, as in the photo. If necessary, add salt and pepper to taste.
Place the breadcrumbs in a container. In another container place the 4 eggs and mix well until the yolks and whites are mixed. These are the ingredients for breading chicken drumsticks instead of making drumstick batter.
After everything is ready, put the oil to heat until it is very hot. Now just roll the chicken stuffing in your hand and first pass it in the egg, then in the breadcrumbs and put it to fry until golden brown.
Tip: You can also bake this drumstick in AirFryer. In this case, roast at 180ºC for 10-15 minutes.
Put this flour-free chicken drumstick on a plate with absorbent paper, to drain off excess oil, and it's ready to serve! Easy, practical and delicious for any occasion. Try it and let us know what you think!
